It’s no secret that I love cupcakes, which is why I don’t make them very often!
4oz self raising flour
1 tsp baking powder
Pinch of salt
Cream together the butter and sugar, then add the rest of the ingredients and whisk until light and fluffy.
Fill the mixture into the cases and bake on gas mark 5 for around 15 minutes. Poking a skewer in and it coming out clean will show that they are done.
Leave to cool in the tin for 5 minutes so they keep their shape, then transfer to a cooling tray. Once cool then decorate!
