Baking: Orange and Blueberry Breakfast Tealoaf

I became somewhat obsessed with the idea of this after making the Banana &  Walnut Tealoaf.  I had the idea that it could be healthier and more substantial so I began playing around with it.  It’s a work in progress and no doubt when I’ve reduced the butter down then I’ll be happy.

Ingredients
100g softened butter (or baking equivalent/low fat spread)
50g caster sugar
2 eggs
200g plain flour
50g porridge oats
50g mixed berry & seed mix
50g chopped walnuts
Large handful of blueberries
1 tsp orange extract
2 tsp baking powder
170ml milk
1 tbsp honey

Method
Mix together  the sugar and butter then add the egg,  orange extract and honey.

Add the flour,  baking powder,  oats, seeds (I used Asda triple berry and seed mix),  walnuts then add the milk.

Fold in the blueberries with a large spoon.

Place in a lined 2lb loaf tin.  On the surface of the mix,  add a few more blueberries and more of the chopped walnuts.

Bake at gm5 for around 1 hour 10 mins or when a skewer poked in the centre,  comes out clean with no mix stuck to it.  Leave in the tin until cold then remove from tin.

It’s an extremely filling,  very tasty,  and very pretty tealoaf.  Hope you enjoy it.
