In my quest to perfect pastry (it’s working well so far), I had a go at jam tarts. This is a childhood favourite that never fails to satisfy whether you’re a kid or an adult. Because we were watching Paddington, I included some marmalade ones as well 🙂
Firstly, make up a batch of sweet pastry
Preheat the oven to GM 5
Grease a 12 mini wells Yorkshire pudding tray
Roll out the pastry on a floured surface to a thickness of 5mm. Then using an appropriate sized cutter (I used a pint glass) put a circle of pastry into each well.
Put a tea spoonful of jam/lemon curd/marmalade in each pastry case.
Then with a sharp knife, cut thin strips of the left over pastry.
Layer the strips over the tarts in a lattice.
Bake for 12-20 mins (check after 12) depending on your oven temperature. Remove and allow to cool before eating.
