This is a result of years of experiments. I’ve found it makes beautiful light and fluffy dropscones (or pancakes if you’re American)
4oz self raising flour
1tsp baking powder
3 tbsp Greek yoghurt
A pinch of salt
Combine all the ingredients except the milk and mix thoroughly. Then slowly add milk until you get a nice smooth thick batter. Allow to stand for 5 mins then stir. You’ll find its light and fluffy.
In a frying/griddle pan, over a low heat, melt a knob of butter and dollop a spoonful for each dropscone. Wait until bubbles appear all over the dropscones before turning.
I like mine with nothing more than a small amount of butter on but obviously put whatever toppings you want on.
A nice savoury version is to omit the sugar and add a small amount of pepper and a handful of sweetcorn to the mix.
