Cooking: Carrot and Coriander Soup

Because Q can’t eat carrots,  I make this for the kidlet and I while he has French Onion Soup. It’s very easy to make and ridiculously tasty.

Ingredients
1kg chantenay carrots
1 large onion,  chopped
1 large clove of garlic, chopped
1 tbsp oil
1 tbsp honey
3 tsp ground Coriander
1 litre of vegetable stock
Salt and pepper

Method
Heat the oil in a pan and fry onions until soft and translucent.

Chop the carrots and add them to the pan with the Coriander. Fry off for a few minutes then add the stock. Bring to the boil and then cover and reduce the heat.  Simmer for 40 mins. Then blend until the soup is smooth. Stir in the honey and season to taste.
