This is so moist and tasty, an ideal way to use up ultra ripe bananas. It’s one of the reasons I try to keep walnuts or cashew nuts in. It also freezes well.
100g softened butter
225g plain eggs
1 beaten egg
2 tsp baking powder
3 very ripe bananas
85g chopped walnuts or cashew nuts
2 tbsp granola
2lb lined loaf tin
Preheat oven gm 4
Mix together butter, sugar and egg. Then add flour and baking powder.
Peel and mash the bananas then add to the mix along with the nuts.
Pour mix into tin and sprinkle the granola over it. Bake in the tin 60 – 70 mins (check after an hour).
Once cooked, leave in the tin to completely cool. Then transfer to a container. Will keep for approximately a week (if you can resist eating the whole loaf in one day).
Enjoy with a cuppa.
