I fancied something sticky and stir fried so I cobbled this together and it definitely hit the spot.
Ingredients for the marinated chicken
4 small chicken breasts, cut into strips
2 chillis, deseeded and finely chopped
2 cloves of garlic, finely chopped
2 tbsp honey
Lots of Soy sauce
1 sheet of fine noodles (approx 100g)
2 pak choi, cut into strips
2 – 3 large mushrooms
2 spring onions, chopped
2 tbsp oil
The day before cooking, place the chicken strips and all the marinade ingredients in a large food storage bag. Tie and give it a good shake. Put in the fridge and periodically, give it a good shake.
To cook, get a large frying pan or wok and get it very hot. Tip the contents of the bag into the pan, it should sizzle immediately. Keep moving around the pan. It should take approximately 10 mins to get it cooked.
Whilst it’s cooking, boil some water and cook the noodles for 2 – 3 mins. Cut the pak choi i to strips and steam for 3 – 4 mins. When the chicken is cooked, add the oil and using a spatula, work free all the bits of marinade stuck to the pan.
Then add the mushrooms & spring onions and combine. Stir fry for a few mins. Then add the pak choi and noodles and mix throughly.
Serve and enjoy.
