Cooking: Kale Pesto

I’d heard this mentioned so many times but never made it. Rummaging around in the fridge, I found half a bag of exhausted looking kale, so decided to have a go. It’s very simple and relies mainly on your taste.

Ingredients
Kale
Parmesan cheese
Oil
2 garlic cloves
Handful of pine nuts

Method

In a food processor,  blitz the kale one handful at a time.

Then add the garlic (I grated it in), parmesan and oil (one tbsp at a time). Keep blitzing.

When you’ve got the taste you want, put it in the jar and keep in the fridge.
