Baking: Banana, coconut & cashew muffins

These were born out of needing to use up 2 over ripe bananas and having a craving for warm muffins for breakfast.

Ingredients
240ml milk
260g plain flour
100g sugar
1 tbsp baking powder
1/4 tsp salt
100g melted butter
2 ripe bananas
1 medium egg
100g desiccated Coconut
50g cashew nuts, crushed.

Method
Mash the bananas with a fork
Mix the dry ingredients
Mix the wet ingredients.
Spoon into muffin cases &  bake for 20 – 24 mins. Allow to cool in the tray for a few mins before transferring to wire cooling tray.

Serve with coffee or warm with a lovely thick,  vanilla custard .
