This is one of the ultimate comfort foods. Not very good for you but ridiculously tasty and moreish.
1 egg, beaten
4 chicken breasts
Salt and pepper
In 3 bowls, place the flour, egg and breadcrumbs. Season the flour with salt and pepper.
Place a chicken breast in between 2 pieces of cling film. With a rolling pin or meat mallet, bash the chicken carefully to thin it out. Be careful as it’s very easy to tear and mangle the chicken.
Heat some oil in a pan. Whilst it’s getting hot, dip the chicken in the flour and coat thoroughly. Then dip it in the egg then the breadcrumbs. Place in the pan over a low to medium heat.
Fry in the hot oil for 6 – 8 minutes then flip and cook for another 6 -8 minutes until the chicken is cooked throughout and the breadcrumbs are crispy and golden brown.
Since cooking this, I’ve discovered Panko breadcrumbs. They’re much lighter than normal breadcrumbs and give much nicer, crisper coating. I used these to make chicken goujons and I won’t use any other breadcrumb now.
