Baking: Cardamom & Rosewater biscuits

These were an experiment and they really worked. They beautifully delicate and perfumed.

6oz plain flour
4oz butter
3oz sugar
1 egg yolk
1 tbsp rosewater
1 tsp cardamon pods

Rub the butter into the flour then add the sugar,  egg yolk and rosewater to mix to a soft dough. Wrap in cling film and chill in fridge for 20 mins.

Pre heat oven to gm 6. De pod and crush the cardamon seeds.


Roll out dough on a floured surface and cut out and put on lined trays. Sprinkle on the cardamon. Bake for 12 mins swapping trays halfway through.


Leave on the trays for 10 mins to harden, then transfer to cooling trays.
