Ice cream is one of the easiest, cheapest treats you can make. It can be plain, it can be added to. Whatever your heart desires. Today I had some strawberries & blueberries left over in the fridge so I decided to blitz them and put them in some ice cream.
600ml double cream
100g icing sugar (more or less, taste as you go)
Handful of berries
1 tsp vanilla extract
Trim and halve the strawberries and add to the blender with the blueberries.
Blitz until you have a smooth puree. Set aside. Whisk the icing sugar, vanilla and cream together, then add the fruit mix.
Put into a carton suitable for freezing, and freeze for 24 hours.
