Cooking: Drop scones (or pancakes if you’re American)

I’ve been using the same recipe for years and recently I’ve been wanting fatter, fluffier Drop scones so I decided to play about with the recipe. This works. Too well.


200g self raising flour

1tbsp sugar

1 1/2 tsp baking powder

Pinch of salt

2 eggs

25g melted butter



In a bowl, mix together flour, salt, baking powder & sugar, using a whisk (basically does the job of sifting). Make a well in the centre and crack the eggs into it. Mix well with the whisk, gradually adding milk until you get the consistency of lightly whipped cream. Leave to rest for 20 mins.

In a frying pan/griddle/skillet over a low to moderate heat, add a small knob of butter and 1 tsp oil. Add spoonfuls of the batter (leaving a gap between them) and cook 1 – 2 mins (or until tiny holes begin to appear on the uncooked side). Flip over and cook for another minute or so. Repeat until batter has been used.
