Culinary Journey (Meringue): Cloud Eggs

I saw these on instagram and my immediate thought was “how faddy”, quickly followed by “but they do look lovely”. So I decided to give them a go. Turns out they’re ridiculously easy to make and a fun & healthy alternative to a fried egg.


2 eggs, separated


Whisk the egg whites until stiff peaks form

Line a tray with baking parchment and dollop the egg whites into 2 lots. Make sure you form an indentation in the middle for the egg yolks to go into later.

Bake in the oven (gm 7/220°C) for 3 mins. Then place the yolks into the indentations. Bake for another 3 mins or until the egg whites have a lovely golden hint to them. (Tip: they will stick to the baking parchment so be careful when removing them. You’ll have to gently peel them off)

Serve with toast.
